Ingredients

  • 3 tsp sesame oil
  • 3 scallions (diced)
  • 2 cloves garlic (minced)
  • 1 tsp grated ginger
  • 1 cup sliced shiitake mushrooms
  • 48 oz low-sodium chicken broth
  • 4 baby bok choy (leaves separated)
  • 30 frozen mini wontons
  • 1½ tbsp soy sauce
  • 1½ tbsp apple vinegar

Instructions

  1. In a large pot, warm 2 teaspoons of sesame oil over medium heat. Add the white parts of the scallions, minced garlic, and ginger. Stir until fragrant (about 4 minutes).
  2. Pour in the chicken broth and bring to a boil.
  3. Add baby bok choy and frozen wontons; reduce heat to simmer for about 5 minutes until wontons float.
  4. Remove from heat and stir in green scallion parts, remaining sesame oil, soy sauce, and apple vinegar.
  5. Serve hot in bowls with optional chili oil drizzle.
