  • 4 medium potatoes (diced)
  • 1 large onion (diced)
  • 3 cloves garlic (minced)
  • 6 cups chicken broth
  • 1 bunch kale (chopped)
  • 1 cup heavy cream
  • Olive oil
  • Salt and pepper to taste
  • Optional: red pepper flakes

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat. Add chicken sausage, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes.
  2. Add diced onion and sauté for 3-4 minutes until softened. Stir in minced garlic and cook for an additional minute.
  3. Add diced potatoes and pour in chicken broth. Bring to a boil, then reduce to simmer for about 15 minutes until potatoes are tender.
  4. Stir in chopped kale and optional red pepper flakes; cook for another 5 minutes.
  5. Lower heat and stir in heavy cream. Season with salt and pepper to taste; warm through for an additional 2-3 minutes.
  6. Serve hot with crusty bread if desired.
