  • 160gm whole raw almonds
  • 190 gm flour
  • 160 gm butter
  • 90 gm Demerara sugar
  • 1/2 tsp vanilla extract
  • 1 cup fresh or frozen berries (strawberry or raspberry or a combination)
  • ¼ cup sugar
  • 1 Tbsp lemon juice
  • ¼ cup water
  • 230 gms cream cheese
  • 100 g icing sugar
  • 150 ml berry coulis (cooled)
  • 400 ml cream (whipped)
  • 3 leaves vegan gelatin
  • Fresh strawberries & raspberries for garnish
  • Any leftover berry coulis to garnish (optional)
  • Whipped cream to garnish (optional)

Instructions

  1. 1. Preheat your oven to 160°C (320°F).
  2. 2. In a food processor, combine almonds, flour, butter, sugar, and vanilla extract for the almond crumble. Blend until crumbly and bake for 30-40 minutes until golden brown.
  3. 3. Simmer berries with sugar, lemon juice, and water in a pot until thickened to create the berry coulis; let cool.
  4. 4. Bloom vegan gelatin in cold water, then dissolve in cream.
  5. 5. Mix cream cheese with cooled berry coulis; fold in whipped cream and gelatin mixture gently.
  6. 6. Layer almond crumble and cheesecake mixture in serving glasses; refrigerate before serving.
  7. 7. Garnish with fresh fruit and extra berry coulis if desired.
