  • 1 tablespoon cinnamon
  • ¼ teaspoon salt
  • 1 ½ cups regular or gluten-free all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 4 tablespoons melted vegan butter (for cinnamon swirl)
  • â…“ cup light brown sugar (for cinnamon swirl)
  • 2 tablespoons cinnamon (for cinnamon swirl)
  • ¾ cup powdered sugar (for frosting)
  • 2 tablespoons melted vegan butter (for frosting)
  • 2 oz softened vegan cream cheese (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla extract until well combined.
  3. In another bowl, whisk together baking powder, baking soda, cinnamon, salt, flour, and oats. Gradually fold into the wet mixture until just combined; avoid overmixing.
  4. Pour half of the batter into the loaf pan. In a small bowl, mix melted vegan butter, brown sugar, and cinnamon for the swirl. Spread half over the batter.
  5. Layer remaining batter on top and then spread the rest of the swirl mixture.
  6. Bake for 50–60 minutes or until a toothpick comes out clean.
  7. Allow to cool before frosting with a mix of powdered sugar, melted vegan butter, and softened cream cheese.
