  • 12 corn tortillas
  • 1 yellow onion, chopped
  • 1 poblano pepper, seeded and chopped
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons tomato paste
  • 23 teaspoons chili powder
  • 2 teaspoons smoked paprika
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1 cup shredded Mexican cheese blend
  • Crema (for serving)
  • Avocado (for serving)
  • Cabbage (for serving)
  • Cilantro (for serving)

Instructions

  1. Preheat oven to 425°F.
  2. In a skillet, heat olive oil over high heat. Add ground meat, chopped onion, and poblano pepper; cook until browned.
  3. Stir in tomato paste and spices; add water and simmer until thickened.
  4. On baking sheets, lightly rub corn tortillas with olive oil and bake for 7 minutes until crisp.
  5. Mix the seasoning blend and sprinkle over warm tostadas.
  6. Assemble by adding cheese to half the tostadas; top with another tortilla and bake for an additional 5 minutes until melted.
  7. Serve topped with avocado, chicken mixture, cabbage, cilantro, and crema.
