  • 2 eggs

  • 3/4 cup whole milk
  • 1/2 cup water
  • 3 tbsp unsalted butter
  • 1/2 cup castor sugar
  • 1/2 cup unsalted butter (for sauce)
  • Thinly sliced orange peel
  • 3/4 cup orange juice

Instructions

  1. In a mixing bowl, combine flour, granulated sugar, and salt. In another bowl, whisk eggs, vanilla extract, milk, and water together. Gradually mix wet ingredients into dry until smooth. Let the batter rest for 30 minutes.
  2. Heat a non-stick skillet over medium heat and melt a small amount of butter. Pour about 1/4 cup of batter into the pan, swirl to coat evenly, and cook for 1-2 minutes until edges lift; flip and cook for another minute. Repeat with remaining batter.
  3. For the orange sauce, melt castor sugar and unsalted butter in a saucepan over medium heat until bubbly. Add sliced orange peel and orange juice. Simmer for 5-10 minutes until thickened.
  4. Fold each crepe into quarters and immerse them briefly in the sauce before serving.
