  • ½ cup low-sodium soy sauce
  • ¼ cup packed brown sugar
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • ¼ teaspoon red pepper flakes (optional)
  • ½ cup mayonnaise
  • 2 tablespoons sriracha (adjust to your heat preference)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • ½ teaspoon garlic powder
  • 4 cups cooked jasmine rice, warm
  • 2 large cucumbers, thinly sliced
  • 2 ripe avocados, sliced
  • 4 cups fresh arugula
  • ¼ cup toasted walnuts, roughly chopped
  • 2 tablespoons sesame seeds
  • 2 green onions, sliced

Instructions

  1. Prepare all ingredients and cook the jasmine rice.
  2. Whisk together soy sauce, brown sugar, honey, garlic, ginger, rice vinegar, cornstarch, and optional red pepper flakes for the teriyaki glaze.
  3. In another bowl, mix mayonnaise with sriracha, rice vinegar, sesame oil, and garlic powder for the yum yum sauce.
  4. Season chicken with salt and pepper; sear in a hot skillet until golden brown on all sides.
  5. Pour teriyaki glaze over the chicken and stir until glossy and thickened.
  6. Assemble bowls with rice as the base, topped with glazed chicken and fresh veggies.
