  • 3 ½ cups peeled fresh ginger
  • 4 cups water
  • 5 cups white sugar
  • 1 (3 oz) pouch liquid pectin
  • 5 half pint canning jars with lids and rings

Instructions

  1. Cut the ginger in half; cube one half and shred the other.
  2. Simmer cubed and shredded ginger with water in a large pot for 1 hour and 15 minutes. Reserve ½ cup of the liquid after draining.
  3. Chill the cooked ginger in the refrigerator for at least 4 hours.
  4. In a large pot, combine chilled ginger, reserved water, and sugar; bring to a boil for 1 minute.
  5. Stir in liquid pectin; reduce heat and simmer for an additional 7 minutes while skimming off foam.
  6. Sterilize canning jars by boiling them before filling them with marmalade.
  7. Fill each jar, leaving about ¼ inch of space at the top; remove air bubbles and clean rims before sealing with lids.
  8. Process filled jars in a boiling water bath for 15 minutes to seal properly.
  9. Allow jars to cool completely before checking seals and storing in a cool place.
