  • 1 cup Kalamata olives
  • 1 cup feta cheese
  • 1 cup cherry tomatoes
  • 1 large cucumber
  • 1 medium red onion
  • 1/4 cup fresh parsley
  • 1/4 cup fresh dill
  • 1/3 cup extra virgin olive oil
  • 3 tablespoons red apple vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder

Instructions

  1. Wash potatoes and boil in salted water until fork-tender (15–20 minutes). Drain and cool.
  2. Chop cherry tomatoes, cucumber, red onion, parsley, and dill.
  3. In a mixing bowl, whisk together olive oil, vinegar, mustard, oregano, and garlic powder.
  4. In a large bowl, combine cooled potatoes, chopped veggies, olives, and crumbled feta. Pour dressing over and gently toss.
