Ingredients

Scale

10 large lemons (organic, zest only)
750 ml vodka or grain alcohol
3 cups water
2 cups granulated sugar

Instructions

  • Wash and dry the lemons, then carefully peel the zest, avoiding the bitter white pith.
  • Place the lemon zest in a large glass jar and pour the alcohol over it.
  • Seal and let it infuse in a cool, dark place for 7–14 days, shaking occasionally.
  • In a saucepan, heat water and sugar until dissolved to create a simple syrup. Let cool completely.
  • Strain the lemon-infused alcohol to remove the zest.
  • Mix the infused alcohol with the cooled syrup and stir well.
  • Transfer to bottles and let rest for a few days before serving.
  • Serve chilled for the best flavor.
