  • 5 cloves garlic (minced)
  • 2 tbsp tomato paste
  • 5 cups chicken broth
  • 2 cups cooked chicken (shredded or chopped)
  • 1 pound shelf-stable gnocchi
  • 34 oz baby spinach
  • Grated parmesan cheese (for serving)

Instructions

  1. Heat reserved oil from sun-dried tomatoes in a large pot over medium heat. Add onion, carrots, and celery; sauté until softened (about 5 minutes).
  2. Stir in chopped sun-dried tomatoes, garlic, Italian seasoning, smoked paprika, onion powder, salt, and pepper; sauté for an additional minute.
  3. Mix in tomato paste and chicken base; cook for 1 minute.
  4. Slowly add chicken broth while scraping the pot's bottom; stir to combine.
  5. Bring to a simmer, partially cover with a lid, and let simmer on low for about 15 minutes.
  6. Add shredded chicken, spinach, evaporated milk, and gnocchi; cook for an additional 5-10 minutes until heated through.
  7. Serve hot with grated parmesan cheese on top.
