  • 1 pound baby potatoes, halved
  • 4 tablespoons extra virgin olive oil
  • kosher salt and black pepper
  • 11 1/2 pounds salmon filet
  • 2 tablespoons cajun seasoning
  • 1 tablespoon lemon zest plus 2 tablespoons lemon juice
  • 2 teaspoons red apple vinegar
  • 1 cup arugula
  • 1/2 cup fresh basil leaves, roughly torn
  • 1/4 cup fresh dill, roughly torn
  • 1 bunch asparagus, ends trimmed
  • 1/2 cup grated parmesan
  • 4 tablespoons salted butter

Instructions

  1. Preheat your oven to 425° F.
  2. On a large baking sheet, combine the halved baby potatoes with 2 tablespoons of olive oil. Season them with kosher salt and black pepper. Toss well to coat all sides.
  3. Place the baking sheet in the oven and bake the potatoes for about 15 minutes until they start to soften.
  4. Remove the potatoes from the oven. Place the salmon in the center. Rub with remaining olive oil and cajun seasoning. Add asparagus around it, tossing them with grated parmesan.
  5. Return everything to the oven and bake for another 10-15 minutes or until salmon reaches your desired doneness.
  6. In a mixing bowl, whisk together lemon zest, red apple vinegar, and remaining olive oil. Season with salt and pepper. Add arugula, basil, dill, and toss until mixed well.
  7. In a medium pot over medium heat, melt butter. Allow it to brown slightly until fragrant (about 2-3 minutes). Remove from heat and stir in lemon juice.
  8. Plate the salmon, potatoes, and asparagus together with arugula salad on top. Drizzle brown butter over everything before serving.
