Ingredients

  • 5 large organic, untreated lemons
  • 500 ml neutral alcohol (or substitute with fruit juice or broth)
  • 600 g sugar
  • 750 ml water

Instructions

  1. Wash the lemons thoroughly and scrub their skins to remove impurities. Pat them dry and peel off the yellow zest using a vegetable peeler.
  2. Place the lemon peels in a glass jar and cover with alcohol (or fruit juice). Seal tightly and let it infuse in a dark place for 30 days.
  3. After infusion, strain the mixture into a saucepan. Add water and sugar, bringing it to a boil until sugar dissolves. Let cool.
  4. Combine the syrup with the lemon infusion and let rest in a cool place for another 40 days.
  5. Strain again and bottle your limoncello.
