  • 1 medium pineapple
  • 1 ½ lbs boneless skinless chicken breasts
  • ½ tsp Salt
  • ¼ tsp ground black pepper
  • 1 Tbsp cooking oil (vegetable oil, coconut oil, olive oil etc.)
  • 1 cup pineapple chunks
  • ¼ cup soy sauce
  • ¼ cup water
  • 3 Tbsp brown sugar
  • 1 tsp ginger powder
  • 3 Tbsp rice vinegar
  • 2 tsp cornstarch
  • 3 garlic cloves (minced)
  • 2 cups cooked rice
  • 1 green onion (chopped)
  • ½ tsp sesame seeds

Instructions

  1. Cut the pineapple in half lengthwise and scoop out the flesh to create two boats.
  2. In a skillet, heat oil over medium heat, season chicken with salt and pepper, and cook until golden brown.
  3. For the sauce, mix reserved pineapple chunks, soy sauce, water, brown sugar, rice vinegar, cornstarch, and minced garlic.
  4. Pour the sauce over the chicken and simmer until thickened.
  5. Fill each pineapple boat with rice and top with the teriyaki chicken mixture.
