  • 2.5 to 3-pound spaghetti squash
  • 3 tablespoons salted butter
  • 4 cloves minced garlic
  • 1/4 teaspoon red pepper flakes
  • 1 pound large raw shrimp, peeled and deveined
  • 5 ounces fresh baby spinach
  • 1/2 cup low-sodium vegetable stock
  • Juice of 1/2 lemon
  • Chopped parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Halve the spaghetti squash lengthwise and scoop out the seeds.
  3. Brush with salted butter, season with salt and pepper, and bake cut-side down on a baking sheet for about 35 minutes until tender.
  4. Meanwhile, melt 1 tablespoon of butter in a skillet over medium heat, add garlic and red pepper flakes, sautéing until fragrant.
  5. Add shrimp to the skillet and cook until pink, about 2–3 minutes per side.
  6. Stir in spinach and vegetable stock; let simmer until spinach wilts.
  7. Once the squash is done, scrape out strands into bowls and top with the shrimp mixture. Squeeze lemon juice over each serving and garnish with parsley.
