  • 6 oz white chocolate melting wafers
  • 3 oz heavy cream
  • 8 oz dark chocolate melting wafers
  • Extra freeze-dried raspberries for decoration

Instructions

  1. In a food processor, grind freeze-dried raspberries into a fine powder and set aside.
  2. Heat heavy cream in a small saucepan over medium heat until simmering, then pour over white chocolate and raspberry powder. Stir until smooth.
  3. Chill the mixture in the refrigerator for 45 minutes to 1 hour until firm enough to scoop.
  4. Use an ice cream scoop to portion out the filling and roll into balls, placing them on a parchment-lined baking sheet. Refrigerate for an additional hour.
  5. Melt dark chocolate in a heatproof bowl over simmering water. Dip each truffle in melted chocolate and place back on parchment paper. Decorate with crushed raspberries before chilling again for 30 minutes.
