  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 can crushed tomatoes (14 oz)
  • 1 cup beef broth
  • 1/2 cup coconut milk
  • 2 cups all-purpose flour (for naan)
  • 1/2 cup plain yogurt (for naan)
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup warm milk
  • 1 tbsp melted butter (for cooking)
  • 3 cloves garlic, finely minced

Instructions

  1. Heat oil in a large pot over medium-high heat. Sauté onions until translucent, then add garlic and ginger until fragrant.
  2. Stir in curry powder and other spices; cook for 2-3 minutes. Add beef cubes and brown on all sides.
  3. Pour in crushed tomatoes, beef broth, coconut milk; season with salt and pepper. Bring to a simmer.
  4. Cover and slow cook on low for 4-6 hours until the beef is tender.
  5. For the naan, mix flour, baking powder, baking soda, salt, yogurt, and warm milk until a dough forms. Knead lightly and let rest for 30 minutes.
  6. Roll out dough into rounds, spread minced garlic on top, then cook in butter over medium heat until golden brown.
