  • 500 g strawberries (fresh or frozen)
  • 50 g granulated sugar
  • 1 tablespoon water
  • 190 g all-purpose flour
  • 75 g natural cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 115 g unsalted butter (melted)
  • 100 g light-tasting oil
  • 100 g granulated sugar
  • 100 g brown sugar
  • 2 large eggs (room temperature)
  • 330 g milk (room temperature)
  • 250 g cream cheese (softened to room temperature)
  • 115 g unsalted butter (softened to room temperature)
  • 100 g powdered sugar
  • 70 g strawberry jam (from above)
  • 1 teaspoon vanilla extract
  • 200 g strawberries (finely diced)
  • 7 strawberries (halved for decoration)

Instructions

  1. In a saucepan over medium heat, combine the strawberries, granulated sugar, and water. Cook until the strawberries break down and thicken into a jam-like consistency (about 10-15 minutes). Let cool completely before using.
  2. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round baking pans.
  3. In a large mixing bowl, sift together all-purpose flour, cocoa powder, baking powder, baking soda, and salt. Whisk until well combined.
  4. In another bowl, mix melted butter, oils, granulated sugar, brown sugar, and eggs until fully blended. Gradually add milk while mixing until smooth.
  5. Slowly incorporate the dry ingredients into the wet mixture, stirring gently until just combined. Do not over-mix; some lumps are okay.
  6. Pour equal amounts of batter into prepared pans. Bake in preheated oven for about 30-35 minutes or until a toothpick inserted comes out clean. Allow cakes to cool in pans for 10 minutes before transferring to wire racks to cool completely.
  7. Beat softened cream cheese and butter together until creamy. Gradually add powdered sugar until well combined. Stir in cooled strawberry jam and vanilla extract.
  8. Once cakes are cool, place one layer on a serving plate. Spread an even layer of strawberry jam filling on top. Add second layer on top of the first. Use remaining frosting to cover the entire cake smoothly.
  9. Garnish with finely diced strawberries around the sides of the cake and top with halved strawberries for an elegant finish.
