  • 3 1/2 cups hulled and chopped fresh strawberries
  • 1 1/4 cup granulated sugar
  • 1/4 cup flour
  • 1 teaspoon vanilla extract
  • juice of 1/2 lemon
  • 2 cups quick cooking oats
  • 2 cups all-purpose flour
  • 1 1/2 cups brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon kosher salt
  • 1 cup cold unsalted butter (cubed)

Instructions

  1. Preheat your oven to 375°F and spray a 9×13 baking pan with baking spray.
  2. In a large bowl, combine chopped rhubarb, strawberries, granulated sugar, flour, vanilla extract, and lemon juice. Toss gently and set aside.
  3. In another bowl, mix quick cooking oats, all-purpose flour, brown sugar, baking powder, baking soda, cinnamon, and kosher salt. Add cubed cold butter and mix until crumbly.
  4. Press half of the topping into the bottom of the pan, layer with the fruit mixture, then sprinkle the remaining topping over the top.
  5. Bake for 45-50 minutes until golden brown and bubbly.
