  • 1 medium spaghetti squash
  • 1 pound boneless, skinless chicken (cut into bite-size pieces)
  • Salt and pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons butter
  • 4 cloves garlic (minced)
  • 1 shallot (minced)
  • 2 tablespoons sun-dried tomatoes (drained and julienne cut)
  • 1 cup heavy cream
  • 1/3 cup Parmesan cheese (grated)
  • 3 ounces baby spinach
  • Fresh parsley (optional, for garnish)

Instructions

  1. Pierce the spaghetti squash several times with a knife and microwave on high for 8-12 minutes until tender. Let it cool.
  2. Season chicken pieces with salt, pepper, and Italian seasoning.
  3. Heat 1 tablespoon of butter in a large skillet over medium-high heat. Add seasoned chicken and cook until no longer pink, about 7 minutes. Remove from pan.
  4. In the same skillet, add remaining butter, garlic, and shallot; sauté until softened.
  5. Stir in sun-dried tomatoes; cook for an additional minute.
  6. Pour in heavy cream; heat until hot and bubbly.
  7. Off heat, stir in Parmesan cheese and spinach; return the chicken to the skillet.
  8. Cut spaghetti squash in half lengthwise; remove seeds and scrape strands with a fork.
  9. Mix spaghetti squash strands into the sauce until evenly coated.
  10. Garnish with parsley if desired before serving.
